I have had Joe's Pad Thai, and believe me....... :cheer
Come on and Z-axis that shit joe :cool
If memory serves I already have, though I've made some adjustments to the recipe since then.

If skullilon decides to host the Rustbelt again in November and is willing to allow me the use of his kitchen, I'll be happy to make it there and provide copies of my latest recipe to any who are interested.

I talk to pxatim a couple of times a month.

Usually at night.

Usually after a few cocktails.

Often he will say, “I want to come out to California, but I don’t want to fish. I just want to go crabbing with Cornholio and eat egg rolls.”

So I reached out to Cornholiio and a date was decided upon.

Last Friday I picked up pxatim at the airport.

It seems that whenever someone flies out to visit they arrive with a healthy dose of plague, and pxatim was no exception.

I resisted the temptation to take him home and make him some onion soup, and instead we headed north.

First stop was a brewery.

Third stop was a grocery store.

Fourth stop was a private Old West cowboy bar.

(No photo)

And our final stop was my Old Man’s place in Mendocino.

After unloading the truck, we had a few cocktails, cooked some dinner, lit a fire, had a few more cocktails, and stayed up later than we should have.

At four the next morning we jumped in the truck and headed for the coast.

Cornholio had asked us to meet him at the boat launch at 6:30, and thanks to pxatim’s excellent navigation skills we managed to arrive early.

I cracked a beer and fired up a cigar while we waited for Cornholio.

Roughly fifteen minutes later we saw a boat come in.

It was Cornholio.

He’d arrived early and had already baited and dropped the pots.

Introductions were made and more beers were cracked, and then we all jumped into Cornholio’s boat and watched pxatim fulfill his dream of crabbing with Cornholio.

At noon we headed back to the parking lot, where Cornholio fried up some of his excellent homemade egg rolls.

I was worried we wouldn’t have enough food, so I cooked up some one star pizzas to go with the egg rolls.

After lunch Cornholio headed out alone and picked up the pots.

We ended up with twenty dungeness and one red crab.

Pxatim and I then headed back to the Old Man’s place, while Cornholio drove back home (three hours), dropped off his boat, and THEN drove up to Mendocino (another 3 hours).

That night the three of us enjoyed a huge crab feed along with some sourdough bread and a one star Caesar salad.

Once dinner was finished, we sat around yet another big fire, and after a fair amount of cocktails we called it a night.

The next morning I cooked up some huevos rancheros and served it up with pico, guac, and burnt Spanish rice.

After breakfast I asked Cornholio and pxatim if they wanted to take a stroll around the property.

They agreed that a walk would do them good, so off we went.

After getting back to the house Cornholio cooked up another batch of his delicious home made egg rolls.

Then we packed up and hit the road.

Many, many thanks to Cornholio for making pxatim’s Make-A-Wish happen.

It was a great trip, and I hope we can all do it again next year.

For the past year or so anytime we would talk Joe would say "So when are you going to come out to Cali"! We would kick around ideas and it would always come back to egg rolls, crabbing and Budweiser. We worked out some dates and I bought a plane ticket... then told my wife. She was not pleased. But with the promise of a return visit in the summer and wine country all was good.. for the most part ha!

3:00am Eastern I caught an uber to the airport and the trip was underway

Touched down at SFO at 11am Pacific
Joe: Are you on the ground
Timo: Just landed
Joe: I'm out front.. look for the Ford Ranger with the an Oak Cabinet in the back
Joe: Cops are making me move

Not long later I see an Oak Cabinet come into view and Joe waving furiously. I throw my bags in the bed, jump in the truck and we're on our way. Having just got over the flu a few days earlier I still had a nagging cough.

Joe: You know what would help that cough.... Budweiser. There's a cooler behind your seat and coozies in your door... drink up. Road sodas were cracked as we headed north.

We crossed the Golden Gate bridge, traffic was light and we were on our way.

A trip to the left coast wouldn't be complete without stopping at Russian River Brewing
We each ordered a pliny draft, then we both ordered a burger, then we both ordered a hazy ipa, then a hot fudge sunday with two spoons. I'm pretty sure our waitress though we were life partners... she would have been right... no homo

After getting our cases of Pliny to go we got back on the road. Not long after we pull off and Joe says want to stop in at this little Winery? Sure why not.. I'm pretty sure I will have to take the Wife here on the return trip.

A few hours later we pulled off the highway onto a narrow dirt road. We stopped at the neighbors ranch to say hi. An oak wood fire was burning and the smell put me back home. They had an old saloon they had built from the ground up that was straight out of a western movie with a fully stocked bar, spittoons on the floor and shotguns behind the bar. More beers were drank then we headed up to camp.

As soon as we pulled into the lane we were greeted by a pack of semi wild dogs. As soon as the truck parked they all started pissing on everything. If it was on the ground it was fair game. Propane tanks, truck tires, my suitcase...

We finished unpacking and poured a drink and started dinner.
